i made a ridiculously delicious + easy cobbler this weekend.
you can use whatever fruit you like, i opted for fresh blackberries & peaches.
here’s the recipe:

1 stick butter
1 cup self rising flour
1 cup sugar
1 cup buttermilk
2 cups fruit
cinnamon & vanilla extract to taste
preheat oven to 350°
in an 8×8 inch baking dish, add butter & place in the oven until melted and slightly bubbling, not browned.
sift the flour, sugar & cinnamon together.
whisk in the buttermilk. batter should be pourable - if it’s too thick, add 1 teaspoon of buttermilk at a time.
once the butter is melted, remove from the oven & immediately pour in batter. the edges will begin to cook, generously add the fruit. 
return to oven & bake for 30-35 minutes or until crust is golden brown.
serve warm with vanilla ice cream.
